I fail at this…

Yes, it has been a minute since I have written. I have many excuses, however I will spare you. I assure you though, we are still eating yummy things. Perhaps it is because the foods have been so yummy, I have had little time to sit down and write. 🙂 I am just going to go with that for now. My sister in law Brandy got me Veganomicon for Christmas this year. Let. Me. Tell. You. I EFFING LOVE THIS COOK BOOK. I have made many things so far, loving too many to mention. And I have failed on more than one front, because not only have I neglected to write, I also continuously forget to take pictures. AAAAAAAAAAAAnyway. Enough apologizing 🙂

I also may need to note, that due to my unhealthy obsession with my new cookbook, this blog may be taking on the appearance of a cook through thingie..which I don’t mind if you don’t ❤

Some things that did not fall through the cracks recently,

Veganomicon’s Beet and Parsnip salad

  • Dressing:
  • 2 cups orange juice (recipie calls for pineapple, which I did not have)
  • 1/3 cup red wine vinegar
  • 1/4 cup grapeseed oil (I used walnut…again…cause thats what I had)
  • 2 tablespoons maple syrup
  • 1 clove garlic, very well minced
  • 1/4 teaspoon salt
  • Salad:
  • 1 poundbeets, peeled and shredded
  • 1 pound parsnips, peeled and shredded
  • 1/2 cup coarsley chopped fresh mint

Just shred the beets and parsnips in the food proscessor, and toss in vinegrette. The longer this sets the better this is, to a point. The salt will eventualy break down the vegetables making them mushy. Ick. Mine didn’t last too long in the fridge anyway, so shouldn’t be a problem.

Veganomicon’s Broiled Tofu

You are going to die when you see how easy this is.

  • 1/4 cup water
  • 2 cloves garlic, minced
  • 3 T fresh lemon Juice
  • 2 T soy sauce
  • 1 scant t olive oil.
  • 1 block extra frim tofu

Cut the tofu width wise in to 4 equal pieces. Cut each of those slices in half widthwise so you have 8 squares. Then, cut each square in half so you have 16 triangles. Dip the tofu in the marinade, place on lightly greased cookie sheet under broiler for 10 min. Remove, spoon marinade over the tofu, broil again for 3 min, repeat untill marinade is gone. THE END. omg so freaking good!

I served this all over a bed of mixed greens, with a drizzle of tahini and some peanuts.

Yesterday was my brothers birthday, so we went to my parents house for dinner and I made my very first vegan cupcakes. I was basically just playing. I used a dead simple vegan chocolate cake recipe, that was too dry in my opinion, and a easy adaptation of a traditional butter-cream frosting using Earth Balance. So, I guess what im getting at  is once again, I have no recipes for this lol.

Originaly, I had this idea for a raspberry glaze, topped with chocolate ganache. I soon realized that I didn’t have any frozen raspberries, so I just put some peanut butter, powdered sugar and water in a sauce pan untill it was thin enough to ice the cupcakes with. I melted some dark chocolate, almond milk and Earth balance to make the ganache.  Then I just swirled the two together on a few of the cupcakes. I was a little afraid, so the majority of them were a tried and true butter cream.

I have also made the cornbread from the book, which was great the first time, but a little dry. The same thing I noticed about the cupcakes. The next time I make a cake, even though it binds, rises, and has a nice crumb just like a regular cake, the moistness is kinda lacking. Today I made another cornbread and used the exact same recipe as before, and just added 1 eggs worth of Energy egg replacement. MUCH BETTER!

I swear I will try to do better! I have made so many things lately, I am sure some will be repeated and documented better!

all’s well that ends well

Some days just don’t start out too great. Liam and mommy were both quite sleepy and pouty today. After I ate the left overs from dinner for lunch we went swimming for an hour or so, while Matt was helping a friend move. When Liam and I came back for a snack he was seriously following me around the kitchen like this.

 

 

So I decided that I needed one of these 😀

 

I made Liam peanut butter quinoa, which wound up being way more tasty than I had expected, I will probably be eating that for breakfast tomorrow 🙂 This was my snack featuring two of my all time favorite foods, avocados, and cold beets.

 

This is one giant wasa cracker, topped with half an avocado, a drizzle of olive oil, splash of hot sauce, salt & pepper.  I used up the rest of a vinaigrette I had made on the beets. Tasty! Since Liam took a total of 1 hour (about) worth of naps today, and basically whined the rest of the time lol, I was super ready to get out of the house. I had seen the sign for a resturant called The Mellow Mushroom, and came across it again while looking up vegetarian resturants in the city. Since Sundays are my cheat day, I felt that pizza was in order 😀

 

 

Everything at this restaurant was crazy fresh, and very tasty. The bruscetta has a fantastic balsamic reduction that I could have eaten with a spoon. I orderd the Mega veggie, which has an entire produce isle on it! It even had tofu! This was the first pizza I have ever seen that had tofu on it.

 

This was the single best pizza I have ever had. The crust is phenominal, and the toppings are deeper than it seems. Liam Matt and I each ate a piece and there is one more for me to have for lunch tomorrow ! ./dance around 😀

Kyle got the cesar pizza, he did not seem to be too impressed but Matt said it was good. ( I didn’t try because there is chicken somewhere underneath the romaine 🙂 )

Matt got the Italian Hoagie, and said it was really good too.

Liam had his very first taste of diet soda today too >.<  ( I was running out of things to distract him with before the pizza got there) It was only like a teaspoon, but surprise surprise! he liked it lol…

 

That was pretty much it for today, I am wiped out and ummm… did any one else see true blood? If they do what the seem like they are going to do, I will have no more reason to watch that show! ❤ Night!

Weirdest dinner ever.

Today has been FANTASTIC! We started out kind of late because Liam, by some miracle, picked up that mom and dad wanted to sleep in a little so we didn’t get up and around until 8:30, which is freaking unheard of in our house. I made breakfast burritos (no pictures, I was sleepy). Liam took a nap, and Matt and I watched a bit of tv and got ready to go. We went down to Pier Park for lunch, Matt got a burger from 5 guys burger and fries, and I got a seaweed salad and avocado sushi. Liam took turns eating bites of nori and avocado, and bites of bun or French fries lol. I am going to get better about toting my camera around with me, especially when we go out to eat. Epic fail on my part 🙂

Our little outing did have a destination other than food. My hair has not been cut in over a year, at least not more than a slight trim. It was, lets just say, unruly.

I have been thinking about cutting it for sooo long, and finally sucked it up and had 7 inches cut off! The cut is not exactly what I had in mind, but the stylist talked me out of a stacked bob. I really love it,  but may still do something a bit more drastic shortly.

I am seeing chocolate brown in my future ❤

After tidying up the house and a couple episodes of Star Trek tos, it was time to make dinner. I love reading Susan’s blog Fat free Vegan, even though I am not a vegan, and I think plant fats (in moderation) are not just good, they’re great! (said in a Tony the tiger voice, rawr.) But recently I came accross this recipie and it sounded so weird I just HAD to try it. Once again there was a fair ammount of forewarning, and even a back up dinner plan that I could whip up on the fly if Matt made his, “really…?” face.

I should not have been so worried! Everything I have made from her site has been phenomenal! I couldn’t keep my spoon out of the pan while it was cooking. Matt had made a run for a few things from the store, one of which was cilantro for the dish, and I was literally pacing the floor anxious for him to get home so we could eat. I was so excited!

This is sooooooooooooooooooooooooooooooooooooooooooooooo good. LOVE. THIS. FOOD.

African Pineapple and peanut stew. (taken from Fat Free Vegan who took it from Mooswood Resturant cooks at home )

1 large onion chopped
2 garlic cloves, minced
1 tablespoon vegetable oil (I used coconut)
1 bunch kale or Swiss chard (4 cups sliced and ribs removed)
2 cups undrained canned crushed pineapple (20-ounce can)
1/2 cup peanut butter
1 tablespoon Tabasco or other hot pepper sauce
1/4 cup chopped fresh cilantro
salt to taste
crushed skinless peanuts
chopped scallions

In a large pot, or deep skillet with a lid, sweat out the onions for 5 – 6 minutes, add garlic cook for an additional minute. Add pineapple and juice and let simmer for 3 – 4 minutes.  Shove as much kale into the skillet as you can fit, cover and let steam untill it has started to wilt a bit. Stir it up and add more. This sauce can cover A LOT of kale so don’t be afraid. After the leaves are just tender add in hot sauce, peanut butter and cilantro. Stir until well mixed, serve over brown rice, top with crushed peanuts and chopped scallions.

It seriously tastes like you might be eating something bad for you, but this made 4 good sized servings, wich means that each has just 1/8 of a cup of peanut butter (or about 180 calories). So a super filling (realy) meal including rice that is just about 350 or so calories? Not too shabby!

Matt and his buddies have gone out for the evening, and I have a date with a God of war, and a bottle of wine ❤  Have a great night folks!

Trying something new.

I have been feeling very … off lately. I can blame it entirely on the fact that my back has begun hurting pretty bad almost every day, but I think it has more to do with what I have been eating. White bread, diet soda, coffee and sugar.

Usually, I am a big multi grain or whole wheat girl, but lately I just have not cared all that much. Now that does not mean that I am indulging in wonder bread but if you see my previous post, the little carb monsters have made their way back into my life.  Bread has become almost a requirement at not just one or two but almost every meal, and some times for snacks (peanut butter and onion sandwich any one?)

The other big one is sugar. At home, before this crazy summer started, I would go through a 1 pound bag of sugar once every 3 or 4 months, and that is only if I was baking something. We used honey, agave and maple syrup for just about everything else that needed a little sweetness.  Now, I have used 3, 1 pound bags since I have been here. Granted I have made pancakes, and Liam’s cake, but a lot of it has gone in my coffee, the dressings I make, sauces for stir fry’s etc…

Coffee and diet soda are things that I had eliminated from my diet and they have made their way back in my life winding their delicious cafinated fingers around my brain when I wake up. I used to revel in tea, almost never got headaches, and had more energy. Lately, if I don’t have coffee as soon as I wake up a headache is most certainly on its way. I just hate the feeling that I NEED something.  Soda has more to do with sugar than the caffeine part I think. I used to take a sip of it and all but spit it out, or maybe dilute it with water. It just tasted soooo sickly sweet. The other day I found I drank an entire diet coke like it was nothing. I know that sounds like no big deal, but just the juxtaposition of  how I was and how I am was striking.

So, after quite a bit of research, I have decided I am not going to have any more of those things, (except on my birthday I ❤ Cake!)  Today is the third day and I am not gonna lie, the no coffee thing is killing me. I have already had 3 cups of green tea >.<  I know that the headaches will be gone in a few days and hopefully I will be back to my old self soon!

The other big change is I can finally say that I am a proper vegetarian. No fish. Yeay! It has taken me almost a year but I can finally let sushi go. I simply can not justify killing one animal for my dinner and keeping another as a pet. The hypocrisy of it is dizzying.

With all the new rules I have I am no longer going to count my calories. Baiscly anything I can eat, I can eat as much as I want. 😀 I am sure you all think I have lost it completely, but I just am trying to listen to my body and heart to find out what makes me the best wife, mommy, friend, Sonia I can be.

Vegan for the summer?

Modern Warfare 2

I like to consider myself fairly geeky in the most endearing form of the word. I like science fiction, horror, and if a movie dosn’t have elves, guns or space I’m basicly not intrested. But I sincerely do not get this game! Matt plays it almost every day for a little while when he gets home from work to “decompress”. Beleive me that part I get. But it is the same thing over and over! And he gets so upset when he dies! Sometimes he is more keyed up than before he started playing!

So I have succomb to sheepdom..

I have always been a fan of foodie blogs, and while I am by no means a culinary artist I do on occasion try interesting things that I have always loved to share! I suppose will try to dedicate an hour or so a day to ramble about what ever little nonsensical thing that happens to drift into my little universe; be it the bazillion uses for coconut oil, or why I can’t watch Earthlings, but I think every one should. Hopefully I may come across some like minded individuals who can help me become healthier, happier and more spiritually and socially sound ❤
