Ricotta, Tofu Ricotta

So evidently, an event of cosmic significants has occurred. And no, before you ask, we have not found a child with a midi-chlorian count higher than 20,000.  Veganomicon strikes again, this time with an inexpensive, dead easy, and delicious “cheese” filling.  I have been glancing at the recipe for tofu ricotta on and off ever since I received the book in December, and finally decided to use it the other night.

LOVE Amy’s Roasted Veggie Cheese less pizza, and was trying to recreate something similar at home on Friday night and it seemed a perfect opportunity to try it! 😀

Roasted veggie pizza with caramelize onions (I am not writing the recipie for the crust because I always just use Fleischmanns Pizza crust yeast *you don’t have to let it rise!* dance around excitedly)

TOPPINGS

2 onions sliced in to thin rings

1/2 a pint of baby bella mushrooms sliced

1/4 each of red yellow and green peppers

1 crown of broccoli cut into tiny florets

2 T olive oil

SAUCE

1, 6 oz can of tomato paste

6 oz of warm water

2 t agave

1t garlic powder

3/4 t onion powder

1/4 t of each of the following spices

  • dried oregano
  • dried basil
  • dried marjoram
  • red pepper flakes
  • black pepper

1/8 t cayenne pepper

salt to taste

TOFU RICOTTA from Veganomicon

(this is the whole recipe, but I only used half of it and saved the rest for later use)

1 lb extra firm tofu

2 t lemon juice

1 clove garlic minced

1/4 t salt

pinch of pepper

2 t olive oil

1/4 cup nutritional yeast flakes

In a large deep skillet ( I use my cast iron one) put the onions and the oil. Set to med low heat and give everything a good toss. Cook on low, stirring very frequently for about 30 minutes, until the onions are pretty and gold and very sweet. While cooking the onions it’s a good time to make the sauce and ricotta. For the sauce, in a medium sized bowl add the paste and water and stir carefully. When it is completely incorporated, add the remaining ingredients and set aside.

For the Ricotta, in a large bowl mush the tofu up with your hands until crumbly. Add lemon juice, garlic salt and pepper, mush again with your hands and get it very mushy by squeezing through your fingers. (I enjoy this bit very much lol)  Add olive oil and nutritional yeast, and stir with a fork now because the olive oil makes it sticky. Set aside.

Heat your oven to 425 . Remove onions from skillet and, if oven safe, place the remainder of the veggies (minus the broccoli) in to skillet and roast for about 10 minutes. After that put the broccoli back in, stir and roast for 5 or 6 more minutes.

Kneed and roll out your dough on to a lightly oiled pan. I always dust mine with a little corn meal too. Assemble your pizza like this. Sauce, cheeze, onions (all of them) veggies and top wit a little more cheeze.

It’s a little time consuming, but veeeeeeeeeeeeeeery worth it.

Once I had made the ricotta, I kept thinking of ways to use it … on a sandwich?

Check! No there is nothing wrong with my tomato! I, as some of you may know, am addicted to produce. When I come across something unique I have a physical NEED to try it. I stumbled upon brown tomatoes last week and have been loving them sooooooo much.

My wonderfuly mommy had the idea to make the nutritional yeast cheeze sauce and make encheladas with it last week I think? Anyway, my dad loved them and after she mentioned them I HAD to have encheladas.  I obviously get my inability to remember and or write down recipies as I’m cooking from her because when I asked her how she made them her answer was along the lines of, ” Well, I made the sauce…and put a can of rotell in… and you know .. cooked some veggies, pretty ones, and then some spices… you know cumin and paprika and stuff….and rolled em up!”

I love her so much lol.

So Sunday I made the sauce like her, and sauteed some onions, mushrooms, a thinly diced sweet potato, garlic and some kale ( I am sure there was more but … I can’t remember) . Mixed it all with some leftover ricotta, and used flour tortillas because I do not possess the necessary skills to be able to assemble enchiladas with corn tortillas with out breaking things in frustration at the uncooperative pieces of bread.

These were beyond yummy and extremely filling too.

Oh yeah! I used a jalepeno too… hmm

And now for something completely different!

Isn’t so cute!!! I am freaking in love with that Intel one lol. There is a panda inside one that I was awfully tempted to get haha! Now all I need is like a good sticker of a Vulcan greeting and maybe the sign of the rebellion and I would be totally set ❤

all’s well that ends well

Some days just don’t start out too great. Liam and mommy were both quite sleepy and pouty today. After I ate the left overs from dinner for lunch we went swimming for an hour or so, while Matt was helping a friend move. When Liam and I came back for a snack he was seriously following me around the kitchen like this.

 

 

So I decided that I needed one of these 😀

 

I made Liam peanut butter quinoa, which wound up being way more tasty than I had expected, I will probably be eating that for breakfast tomorrow 🙂 This was my snack featuring two of my all time favorite foods, avocados, and cold beets.

 

This is one giant wasa cracker, topped with half an avocado, a drizzle of olive oil, splash of hot sauce, salt & pepper.  I used up the rest of a vinaigrette I had made on the beets. Tasty! Since Liam took a total of 1 hour (about) worth of naps today, and basically whined the rest of the time lol, I was super ready to get out of the house. I had seen the sign for a resturant called The Mellow Mushroom, and came across it again while looking up vegetarian resturants in the city. Since Sundays are my cheat day, I felt that pizza was in order 😀

 

 

Everything at this restaurant was crazy fresh, and very tasty. The bruscetta has a fantastic balsamic reduction that I could have eaten with a spoon. I orderd the Mega veggie, which has an entire produce isle on it! It even had tofu! This was the first pizza I have ever seen that had tofu on it.

 

This was the single best pizza I have ever had. The crust is phenominal, and the toppings are deeper than it seems. Liam Matt and I each ate a piece and there is one more for me to have for lunch tomorrow ! ./dance around 😀

Kyle got the cesar pizza, he did not seem to be too impressed but Matt said it was good. ( I didn’t try because there is chicken somewhere underneath the romaine 🙂 )

Matt got the Italian Hoagie, and said it was really good too.

Liam had his very first taste of diet soda today too >.<  ( I was running out of things to distract him with before the pizza got there) It was only like a teaspoon, but surprise surprise! he liked it lol…

 

That was pretty much it for today, I am wiped out and ummm… did any one else see true blood? If they do what the seem like they are going to do, I will have no more reason to watch that show! ❤ Night!

Pizza, pasta and playing

I have not been feeling terribly inspired lately with all of the insurance, fixing the roof, and trip planning stuff that has been going on lately. However, I did feel like trying something I have been thinking about for a while now, an attempt at a deep dish pizza. I usually just roll my dough out to cover poor cookie sheet so it is more like a thin crust. Now, I absolutely adore thin crust pizza, but I was really craving that crispy, almost fried texture of a good pan pizza.

I preheated the oven to 425 while I made my dough. I splurged and used half bread flour and half whole wheat. Once I had the dough mixing, I grabbed my cast iron skillet, put a couple tablespoons of olive oil in it and rubbed a garlic clove into the pan. Then, put it in the oven to heat up. I kneaded some rosemary into the dough, stretched it out and put it in the super hot skillet ( I was scared of burning my hand of, but I managed this time without incident lol). I topped it with my pizza sauce, spinach, mushrooms, onions, bell peppers and basil. It baked around 20 minutes and it was perfectly done!

The pan is so well seasoned that my pizza just fell out! I was all ready to pry it out, so this was a pleasant surprise.

I seriously wonder why I used to spend so much on delivery or frozen pizzas. With Fleischmanns Pizza Crust yeast it is beyond easy and takes 20 minutes to make and 20 minutes (or less depending on your crust) to cook. Plus, you control everything about it, so you know that it is (relatively) good for you hehe 😀

Yesterday we were very busy playing most of the day. Bubbles are awesome, just in case you were wondering 🙂 So a quick dinner was in order. Behold the awesomeness of freezer food lol.  I thawed out my last two seitan sausages and made a quick penne dish.

Not that fancy, but very very good. I finally used the rest  of my basil from the summer rolls the other day lol. I was hesitant to let Liam eat these sausages when I first made them because they are a bit spicy, but he destroys them. I guess he is like his mom and dad with an affinity for spicy stuff 😀

After dinner I turned on the sprinkler in the backyard for Rupert. Since I had mowed that afternoon during Liam’s nap, it was super grassy but that is part of the fun!

Errands and a Star Trek TNG marathon today on Syfy sooo yeah lol I will be “busy” Have a great day!

Yoga was awesome! I seriously LOVE how I feel afterwards! Twice a week is not enough. Once I am a bit more comfortable with the poses and I’m sure that I can do the poses properly *because walking like a pretzel for the rest of my life does not sound fun* I will probably do it a couple times a week at the house.

I made a flower out of the spices for the pizza sauce 😀

Mushroom twinkies!!! I feel like I just found a four leaf clover!!! Surely this is good luck or something right?

I used this yeast my mom had given to me that’s just for pizza. I just followed the directions on the package, but  subbed whole wheat flour and agave syrup for the ap flour and sugar. To be honest I was a little concerned because you don’t let it rise, you just mix it all up, knead a couple times and then stretch it out.  I almost made another batch but didn’t have time. I’m sure glad I left it alone though, this was the result!

I ate when I got back from the gym and this is mah plate. More tahini and seracha >.<  I may have a problem…

Now it is time for some tea, a bath and my book! Reading Slaughterhouse-Five by Kurt Vonnegut. I think I am  in love with this man.  Good night! ❤

Pizza day

Breakfast today was pretty typical, for me any way. One ww pancake with coconut oil, almond butter and a tiny bit of maple syrup, half an avocado and a berry smoothie with coconut oil and flax seeds  and as much spinach as I could shove in the blender.

Liam usually eats rice cereal and applesauce, or an avocado which is what we started with but he didn’t seem to be feeling it today. My smoothie was too sweet (I used a peach soy yogurt instead of the plain) so I dumped the last half back in the blender along with Liam’s avocado and more spinach.  It was a revolting color, hence the absence of picture  * imagine baby poop* see? No picture necessary. Regardless of its color it was super yummy and Liam freaking loved it!  I will definitely make him one again soon and next time I won’t chicken out on the picture 🙂

I don’t know how many times I  have had this exact lunch,  I may be stuck in a rut…but Oh my gosh it is soooooooooo yummy!

All it is is a ww tortilla, topped with hummus, cucumber, red bell, a tiny bit of bleu cheese, spinach, siracha and tahini. Put the tortilla, with everything on it, in a skillet with a tiny bit of evoo and heat till the bottom is a little crispy. Then stick it under the broiler until the spinach has wilted. Y U M. That stuff on the side is sauerkraut. I don’t know why but I can’t get enough of it lately.

I honestly look forward to my roasted broccoli and tahini. When I don’t have it for whatever reason, I miss it  😦 Not today though! I ate 2 heads of it lol >.< I was so full after lunch, but I just couldn’t resist a bite of the chocolate I made yestersay…

Yoga tonight! Hooray! I’m going to go start the pizza dough for Matt’s dinner tonight (I said it was pizza day!) This stupid thing has been flaky all day so even though I don’t like posting more than once a day, I will do dinner pics after I get back this evening ❤
